This wedding perfectly combined classic elegance with that small town countryside charm I adore. When plan A needed to be revised due to COVID, Adele and Spencer decided to host their intimate wedding at his parents home in the beautiful countryside of South Haven, Minnesota.
“Covid really pushed our wedding planning abilities. I often told people that it felt like I had already planned 3 weddings (the original, the ‘what do we do if this happens’, and the ‘yikes, it happened but not in the way we thought, let’s re-plan this one more time’). In the end, Spencer and I grew accustomed to the phrase, “everything happens for a reason,” and it couldn’t have been more true for our special day – in the end, it was perfect. While we missed those who couldn’t make it, we were blessed to be surrounded by some of our closest family and friends, and honestly, that’s all we could have asked for anyway.
A few of the big details: As soon as we knew we didn’t feel comfortable having the reception inside, we pulled from The Blue Heron in Cold Spring, MN – mind you, with only 3 weeks before the wedding day! Knowing how amazing their food is, we asked if they would be available to cater the wedding, lucky for us it was a go! The Blue Heron was fantastic to work with, I can’t speak of them highly enough. We were able to snag a large outside wedding tent from Sartell Tent Rentals for a reasonable price and it’s a family owned business which we loved. We opted for the renowned (and home based) Cold Spring Bakery for our desserts including an assortment of cake donuts. Our DJ, Mike Chatterton with CP entertainment, kept the party going all nigh, and of course, the venue was generously offered to us by none other than Spencer’s parents. This was by far the best part of the wedding as it made it that much more intimate and memorable – especially since we were able to snag a couple photos with our cow in the background!
Overall, the day wasn’t about the food or the venue or the dessert, it was about Spencer and I dedicating our love to one another. The feeling of overwhelming support from those who love us was just icing on the cake.
